One of the hardest things about dealing with food allergies is not being able to buy a cake or throw one together fast...this recipe is the fastest you can get when it comes to making it yourself!
1 box King Arthur Gluten Free Chocolate Cake Mix
2/3 cup vegetable oil
1 1/3 cups water
4 servings Namaste Egg Replacer (8tb warm water + 8tsp replacer)
1 cup So Delicious Plain Yogurt
1/2 cup Earth Balance Whipped Vegetable Oil Spread
8 oz Go Veggie Plain Cream Cheese
Powdered Sugar (add a cup at a time until reaching the desired consistency, usually between 4-5 cups)
Take your frosting/filling from the fridge and plop a big dollop on the top, then use an icing spatula to spread a nice thick layer across the cake. You want a good half inch of filling in there.
